Born after discovering how good pizza in its original form can be, and how different it is compared to most pizza in the UK, Wood Chop Pizza aims to stick as closely as they can to the approach of pizzerias in Naples and create something that would not be out of place there while using ingredients that are a mix of Italian and British.
Neapolitan pizza is quite simple – quality tomatoes, mozzarella and basil on a well-proven dough in a really hot oven, but it needs to be done right, and we have dedicated ourselves to getting each element of the process correct from kneading and proving the dough, to making sure that the pizza is placed in the correct position in the oven to bake it at the right temperature. We mix our own dough and, over the years we have been trading, we have refined our knowledge of the dough’s behaviour to make sure its at the right stage when we come to make the pizza. Our tomatoes are naturally sweet, from the Campania region in Italy, and we only add salt to season and blend them to make our sauce. Our mozzarella and basil is sourced from the UK.
