The Pickled Brisket is a Mobile Salt Beef Bar trading at streetfood markets and events in Bristol and the South West. We make a selection of hot salt beef sandwiches or platters. We even do a veggie version.
We started The PIckled Brisket to bring salt beef farmed and made in the South West to markets and events in Bristol and the surrounding area. Having fallen out of favour in recent years. We plan to bring it back to the forefront of what people want to eat via street food.
All our beef is from 100% native British breeds, farmed on Somerset pastures within the West Country Beef PGI area. It is brined by hand for two weeks and then cooked overnight to produce succulent tasty salt beef. Our bread is handmade by a local, family bakery using traditional techniques with flour from Shipton Mill. We offer a choice of rye sandwiches or brioche rolls plus various specials. We keep our menu simple with a few variations on the classic salt beef sandwich.

"We went for the Classic Reuben on sourdough rye bread, which comprised thick, hot slices of really tender salt beef layered with mustard, gherkins, sauerkraut, Russian dressing and melted Swiss cheese. The contrast between the hot, salty meat, cold crunch of the sauerkraut and smoky cheese was a winning combination and a perfect way to soak up the beer."
